Ingredients:

  • 3 eggs
  • A pinch of salt
  • Zest of 1 lemon
  • 100g sugar
  • 130g flour
  • 110g butter
  • 150g high-quality white chocolate
  • Juice of 1 lemon
  • 1 tsp baking powder

For decoration:

  • Icing sugar
  • Lemon juice
  • Lemon zest
Preparation method:

Start by melting the butter and white chocolate together in a bain-marie (double boiler), stirring gently until smooth and fully combined. Set aside to cool slightly.

In a large mixing bowl, combine the sugar with the zest of one lemon. Rub the mixture between your fingers for a minute—this step helps release the lemon’s essential oils, enhancing the flavor.

Add the eggs and a pinch of salt. Whisk vigorously using an electric mixer or a hand whisk until the mixture becomes light and frothy.

Next, pour in the melted butter and white chocolate mixture. Stir until well incorporated.

Sift in the flour along with one teaspoon of baking powder. Gently fold the dry ingredients into the batter to keep it airy and smooth.

Finally, add the juice of one lemon and mix until the texture is uniform and silky.

Line a square or rectangular baking tin with parchment paper. Pour in the batter, smooth the top, and bake in a preheated oven at 180°C (356°F) for about 30 minutes. (Baking time may vary depending on your oven—check with a toothpick; it should come out slightly moist.)

While the brownie is cooling, prepare a glaze by mixing powdered sugar with a bit of lemon juice until it reaches a pourable consistency. Drizzle it over the warm brownie.
