Steamed Eggplants with Moroccan Spiced Herb Marinade

Ingredients:

  • 2 eggplants
  • 2 garlic cloves
  • 1 tbsp coriander
  • 1 tbsp parsley
  • Salt
  • Pepper
  • Paprika
  • Cumin
  • Ginger
  • Juice of half a lemon
  • Olive oil
Preparation method:

Begin by cutting the eggplants in half lengthwise. Place them in a steaming pot and let them cook until they become tender.

Meanwhile, in a bowl, combine freshly chopped coriander and parsley, salt, pepper, cumin, paprika, ginger, grated garlic, the juice of half a lemon, and olive oil. Mix well to create a flavorful marinade.

Once the eggplants are cooked, line a baking tray with parchment paper and place the eggplants on it. Using a spoon, spread the marinade evenly over the surface of each eggplant half. If you like, sprinkle some grated cheese on top for extra flavor.

Transfer the tray to the oven and bake until the marinade is well absorbed and slightly roasted, and the cheese, if added, has melted beautifully. Serve warm and enjoy!
