Fresh Pasta Salad with Tuna, Pickles & Veggies

Light, flavorful, and packed with vibrant colors, this fresh pasta salad is the perfect balance of textures and tastes! With tender pasta, sweet carrots, tangy pickles, juicy tomatoes, and savory tuna, every bite is a delight. Tossed in a zesty homemade vinaigrette, this easy and refreshing dish is ideal for a quick lunch, a side dish, or a healthy meal on the go!

Ingredients:

  • 100g mini pasta
  • 1 tomato, diced
  • 1 carrot, grated
  • 1 onion, sliced
  • 2 tbsp corn
  • Pickles, chopped
  • 1 can of tuna
Vinaigrette:
  • Olive oil
  • Mustard
  • Salt
  • Pepper
  • Lemon juice
Preparation method:

Start by bringing a pot of water to a boil with a drizzle of olive oil, salt, and pepper. Add the mini pasta and cook until al dente. Once cooked, drain and let them cool.

Meanwhile, peel and slice the onion into thin strips. Heat a drizzle of olive oil in a pan, add the onions, season with salt and pepper, and cook over low heat until they become soft and slightly golden. Set aside.

In a large bowl, add the cooled pasta. Then, mix in the diced tomato, grated carrot, finely chopped pickles, corn, and crumbled tuna. Incorporate the cooked onions and stir well.

For the dressing, whisk together olive oil, mustard, salt, pepper, and lemon juice. Pour the dressing over the salad and mix thoroughly to coat all the ingredients. Let it rest in the fridge for a few minutes before serving to allow the flavors to blend perfectly.
