- 2 large eggplants
- 3 potatoes
- Salt & pepper
- Grated cheese
- 2 large tomatoes
- 1 large onion
- 3 garlic cloves
- Olive oil
- Salt & pepper
- Paprika
- 2 tbsp tomato paste
- 3 tsp cornstarch
- Oregano
Wash the eggplants, cut them into slices, and place them on a baking tray. Lightly salt, drizzle with olive oil, and bake them until tender and slightly golden. Meanwhile, peel the potatoes, cut them into slices, and fry them in hot oil until crispy and golden brown. Drain them on paper towels.
