Moroccan Ground Meat Tagine with Artichokes, Peas & Potatoes

Ingredients (Serves 4):

  • 400g ground meat
  • 4 artichokes
  • 2 potatoes
  • Green peas
  • 1 onion
  • 3 garlic cloves
  • Olive oil

Ground Meat Spices:

  • Salt
  • Black pepper
  • Cumin
  • Ginger
  • Paprika

Tagine Spices:

  • Salt
  • Black pepper
  • Turmeric
  • Ginger
Preparation method:

First, season the ground meat with the specified spices and mix well. Form small meatballs and set them aside. Place a tajine on the stove over medium heat and add a drizzle of olive oil. Add the sliced onion and grated garlic, then let them cook for a few minutes until they become slightly translucent. Next, add the meatballs and let them brown lightly, turning them gently.

Meanwhile, prepare the artichokes by removing the outer leaves to keep only the heart. Cut them in half and arrange them carefully over the meatballs. Then, add the potatoes cut into large cubes, followed by the green peas. Sprinkle with finely chopped fresh coriander to enhance the flavors. Season with the tajine spices, then pour in a little water to allow for a slow and flavorful cooking process. Cover the tajine and let it simmer over low heat until all the ingredients are tender and the sauce has thickened beautifully.
