Moroccan Chicken & Potato Tagine

Ingredients: 

  • Chicken thighs
  • 1 large onion
  • 2 potatoes
  • Parsley
  • Coriander
  • Salt
  • Pepper
  • Turmeric
  • Ginger
  • Garlic powder
  • Olive oil
  • Green olives
  • Juice of half a lemon
Preparation method:

Start by pouring a generous drizzle of olive oil into the tagine, then add the finely chopped onion. Sauté over low heat, stirring occasionally, until it becomes translucent and lightly golden.

Next, add the chicken thighs on top of the onions and season with salt, pepper, turmeric, ginger, and garlic powder. Drizzle with the juice of half a lemon and gently mix to coat the chicken evenly with the spices. Cover and let it simmer on low heat for about ten minutes, allowing the flavors to develop.

Meanwhile, peel the potatoes and cut them into medium-sized cubes. After the chicken has cooked for 10 minutes, add the potatoes around the chicken pieces. Sprinkle with finely chopped parsley and coriander. Add the green olives and pour in a small glass of water to ensure a gentle and even cooking process.

Cover the tagine and let it cook on low heat for about 45 minutes, making sure the sauce does not dry out too much. Add a little water if needed to achieve a rich, flavorful sauce.

Once the chicken is tender and the potatoes are soft, uncover the tagine and let it simmer for a few more minutes to allow the sauce to thicken slightly and intensify in flavor.

Serve the tagine hot with Moroccan bread and enjoy this delicious dish with its authentic flavors.
