Cinnamon Apple Biscuit Cake

Ingredients:

  • Shortbread biscuits (for the base)
  • 2 large apples
  • Ground cinnamon
  • 2 eggs
  • 60g sugar
  • 3 tbsp milk
  • 80g flour
  • 8g baking powder
For Decoration:
  • Sliced almonds
  • Powdered sugar
Preparation method:

Start by preparing the base by arranging the whole butter biscuits neatly at the bottom of a round baking pan lined with parchment paper. If you prefer, you can use any other type of baking pan. Ensure the biscuits cover the entire surface evenly to create a solid and visually appealing base.

Peel the apples and slice them thinly. Arrange the slices neatly over the biscuit base to form an even layer. Generously sprinkle with cinnamon for a warm and flavorful aroma.

In a bowl, whisk the eggs with the sugar until the mixture becomes light and slightly fluffy. Gradually add the milk, followed by the sifted flour and baking powder. Mix gently until the batter is smooth and uniform.

Pour the batter over the apple layer, spreading it evenly to cover the apples completely. Sprinkle slivered almonds on top for a crunchy and delicious finishing touch.

Bake in a preheated oven at 180°C (350°F) until the top is golden and a knife inserted into the center comes out clean.

Allow the cake to cool before removing it from the pan. Once cooled, lightly dust with powdered sugar for an elegant finish.

For serving, I used a round cutter to create beautiful individual portions, but feel free to cut it any way you like for a more casual presentation. This easy-to-make cake is a delightful treat to share with family and friends!
