Zesty Orange Cake with Almond, Ginger & Cinnamon

This Orange, Cinnamon, and Ginger Cake with chocolate is a delightful treat full of fresh citrus flavor, warm spices, and a hint of sweetness. The candied orange pieces and chocolate chips make it even more indulgent, while the orange glaze adds the perfect finishing touch. A perfect dessert for any occasion!

Ingredients:

  • 4 large eggs
  • 180g butter, softened
  • 200g granulated sugar
  • 280g all-purpose flour
  • 80g almond flour
  • 12g baking powder
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • Pinch of salt
  • Juice of 1 orange
  • Zest of 1 orange
  • Candied orange pieces
  • Chocolate chips

For decoration:

  • Chocolate chips
  • Candied orange pieces

For the sauce:

  • Juice of 1 orange
  • Cornstarch (maize starch)
Preparation method:

Start by beating the softened butter and sugar in a large bowl until the mixture becomes creamy and smooth. Add the orange zest and continue mixing to incorporate it well. Then, add the eggs one at a time, beating well after each addition until the mixture becomes light and fluffy. Next, add the orange juice and mix it in.

In another bowl, combine the flour, almond powder, baking powder, cinnamon, ginger, and a pinch of salt. Gradually fold this dry mixture into the wet ingredients, mixing gently until the batter is smooth. Add the candied orange pieces and chocolate chips, and stir to distribute them evenly throughout the batter.

Pour the batter into a greased and floured loaf pan, or one lined with parchment paper. Bake in a preheated oven at 180°C (350°F) for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let it cool for a few minutes before removing it from the pan.

For the sauce, combine the juice of one orange with a bit of cornstarch in a small saucepan. Heat over low heat, stirring constantly until the sauce thickens slightly.

Decorate the cake with chocolate chips, pieces of candied orange, and drizzle with the orange sauce for an extra touch of indulgence. Let it cool before serving for an irresistible orange, cinnamon, and chocolate cake!
