Vibrant Bell Pepper Chicken Rice Bowl

This colorful bell pepper and chicken rice recipe is a delicious and vibrant dish packed with flavor. With tender chicken marinated in aromatic spices and paired with crunchy, fresh vegetables, it’s a quick and balanced meal that's sure to brighten your table. Enjoy this easy, flavorful combination!

Ingredients:

  • 250g of rice
  • 400g of chicken breast
  • 1 onion
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 yellow bell pepper
  • Pepper
  • Salt
  • Ginger
  • Smoked paprika
  • Garlic powder
  • Smoked spices (optional)
  • 2 tbsp of soy sauce
Preparation method:

First, cut the chicken into thin strips and season with the spices (pepper, salt, ginger, smoked paprika, garlic powder, and smoked spices if using). Mix well and let it marinate for a few minutes so the chicken absorbs the flavors. Next, cut the onion into thin strips and slice the bell peppers into strips as well.

In a pan, heat a little oil and add the onion. Cook over medium heat until it becomes translucent. Then, add the bell peppers and cook them for a bit before adding the marinated chicken and soy sauce. Cook everything over medium heat, stirring occasionally, until the chicken is fully cooked and the vegetables are tender.

Meanwhile, place the rice in a pot with twice the amount of water. Cook over medium heat until the water is absorbed and the rice is tender. Once the rice is ready, serve it topped with the chicken and bell pepper mixture. And that's it, your dish is ready to enjoy!
