Ingredients:
- 400g fine semolina
- 1 onion, finely chopped
- 1 can of tuna
- 35ml olive oil
- 1 tsp active dry yeast
- 1 tsp baking powder
- 1 tsp oregano
- Salt and pepper, to taste
- 1 tbsp freshly chopped parsley
- Grated cheese, as desired
- Olives, finely chopped
- 300ml water
Start by cooking the chopped onion in a pan with a pinch of salt until it becomes soft and translucent. Set it aside to cool.
In a large bowl, combine all the dry ingredients: fine semolina, instant yeast, baking powder, oregano, grated cheese, and a pinch of salt and pepper. Add the chopped parsley, sliced olives, and the cooked onion. Mix everything well.
Add the canned tuna along with its oil to the mixture and stir to combine. Gradually pour in the water while mixing until you have a smooth and well-combined dough. There is no need to knead the dough.
Divide the dough into small portions of about 50g each. Shape them into balls, then lightly roll each ball in some semolina. Flatten them into small round flatbreads using your hands or a round cutter.
Cook the mini flatbreads in a lightly oiled pan, brushing the oil onto the pan with a pastry brush. Brown them on both sides until they are fully cooked and slightly golden.
Allow them to cool slightly before serving. Enjoy!
