Chocolate Beetroot Cake: Guilt-Free Indulgence

Ingredients:

  • 3 eggs
  • 100g sugar
  • 250g beetroot purée
  • Vanilla extract or vanilla sugar
  • 150g melted chocolate
  • 200g flour
  • 2 tbsp cocoa powder
  • 16g baking powder
Preparation method:

Start by preheating your oven to 180°C (350°F) and preparing a loaf pan by greasing it or lining it with parchment paper. In a large bowl, whisk the eggs and sugar until the mixture becomes light and frothy. Add the finely blended cooked beets and mix well. Incorporate the slightly cooled melted chocolate and vanilla extract, stirring until smooth.

In a separate bowl, sift together the flour, cocoa powder, and baking powder. Gradually fold this dry mixture into the wet ingredients, stirring gently with a spatula or wooden spoon until the batter is smooth and well combined.

Pour the batter into the prepared pan, smoothing the top with a spatula. Bake for approximately 35 to 40 minutes, or until a toothpick inserted into the center comes out clean. Once baked, let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

For decoration, melt some chocolate and drizzle it over the surface of the cooled cake. Spread it gently with a spatula or spoon to create a smooth, glossy finish. Allow the chocolate to set before serving.
