Cheesy Potato Mozzarella Croquettes

Crispy on the outside, soft and cheesy on the inside, these Potato Mozzarella Croquettes are the ultimate comfort food! 🥔🧀 Perfect for parties, snacks, or a family treat, each bite is a delightful explosion of creamy mashed potatoes paired with gooey mozzarella. Easy to make and absolutely irresistible, this recipe will quickly become a favorite!

Ingredients:

  • 500g potatoes, boiled and mashed
  • 1 onion, finely chopped
  • 3 tbsp cornstarch
  • 1 egg
  • Mozzarella, cut into small cubes
  • Salt, to taste
  • Pepper, to taste
  • Paprika, to taste
  • Garlic powder, to taste

For Frying:

  • Breadcrumbs
  • 2 eggs, beaten
Preparation method:

Start by boiling the potatoes until they are tender, then mash them into a smooth purée. Meanwhile, finely chop the onion and sauté it in a pan with a little oil, salt, and pepper until translucent and lightly golden. Add the egg and cornstarch to the mashed potatoes, mixing thoroughly, then fold in the cooked onions. Season the mixture with salt, pepper, paprika, and garlic powder to taste.

Shape the mixture into small balls, placing a cube of mozzarella in the center of each one. Seal the balls carefully to ensure the cheese is fully enclosed. Dip each ball into the beaten eggs, then coat them with breadcrumbs for a crispy outer layer. Place the croquettes on a plate and refrigerate them for 30 minutes to 1 hour to firm up before cooking.

Fry the croquettes in hot oil until they are golden brown and crispy. Drain them on paper towels before serving. Enjoy!
