Ingredients:
- Lettuce
- 1 potato, cut into large cubes
- 1 small onion, finely chopped
- 1 red bell pepper
- Cherry tomatoes
- Grated carrot
- Pickles
- Corn
Dressing (mayonnaise or vinaigrette):
- Olive oil
- Lemon
- Salt
- Pepper
Start by frying the potato cubes in hot oil until golden and crispy. Once done, drain them on paper towels to remove excess oil and set aside to cool. Meanwhile, roast the red bell pepper in the oven until the skin is charred and easy to peel. Remove the pepper's skin, then cut it into small cubes.
In a pan, lightly sauté the chopped onion with a pinch of salt and pepper until softened and translucent. Set aside to cool.
In a large mixing bowl, combine the fried potatoes, roasted red pepper cubes, sautéed onion, cherry tomatoes, grated carrot, pickles, and corn. Add either a generous spoonful of mayonnaise or a drizzle of the olive oil and lemon vinaigrette. Mix everything gently to ensure all ingredients are coated evenly.
To serve, place a bed of lettuce on the serving dish, then add the prepared mixture on top. Enjoy your flavorful fried potato salad!
