Easy Homemade Falafel Bites

Ingredients:

  • 500g chickpeas
  • 1 onion
  • 6 garlic cloves
  • Fresh parsley and cilantro
  • Salt and pepper, to taste
  • Paprika, cumin, and ground coriander (to taste)
  • 1 tablespoon flour
  • 1 tablespoon baking powder
Preparation method:

To prepare these falafels, start by soaking the chickpeas in water for at least 12 hours or overnight to soften them. Once soaked, drain them thoroughly and pat them dry with a clean towel. In a food processor, combine the chickpeas, peeled and chopped onion, peeled garlic cloves, fresh parsley, and cilantro. Blend until the mixture is uniform but slightly coarse. Transfer the mixture to a large bowl, then add the spices: salt, pepper, paprika, cumin, and ground coriander to taste. Next, incorporate the flour and baking powder, mixing well to form a cohesive dough.

Once the dough is ready, refrigerate it for about 30 minutes to make it easier to handle. Meanwhile, prepare a frying pan or deep fryer with oil and heat it over medium heat. Shape the falafel mixture into small balls or patties using your hands or a falafel scoop. Fry the falafels in the hot oil until they are golden brown and crispy, turning them halfway through to ensure even cooking. Once cooked, drain them on paper towels to remove any excess oil. Serve immediately with tahini sauce, a fresh salad, or in pita bread as desired.
