Ingredients
Brownies:
- 100g milk chocolate
- 60g dark chocolate
- 2 tbsp butter
- 3 eggs
- 200g brown sugar
- 128g all-purpose flour
- 2 tbsp cocoa powder
- 1 tbsp vanilla extract
Filling:
(Chill the filling in the fridge for 20 minutes)
- 200g pistachio spread
- 50g kunafa pastry
- 20g butter
- 30g white chocolate
Preparation method:Prepare the brownie batter
Preheat your oven to 180°C (350°F) and grease a baking pan, then line it with parchment paper for easy removal. In a small saucepan, melt the butter with the milk and dark chocolates over low heat, stirring regularly until the mixture is smooth and homogeneous. Remove from heat and let it cool slightly.
Mix the wet ingredients
In a large bowl, whisk the eggs and brown sugar until smooth and creamy. Add the vanilla extract and mix well. Then, incorporate the melted chocolate and butter mixture, and stir until the batter is well combined.
Incorporate the dry ingredients
In another bowl, sift the flour, cocoa powder, and a pinch of salt. Gradually add this dry mixture to the wet ingredients, mixing gently until the batter is smooth with no lumps.
Prepare the filling
Cut the kunafa into small strips and cook it in a pan with 20g of butter until golden and crispy. Let it cool slightly. Mix the cooked kunafa with the pistachio butter and melted white chocolate in a small bowl. Stir until the filling is homogeneous.
Freeze the filling
Spread the pistachio and kunafa filling into a baking pan lined with parchment paper, then place it in the freezer for 20 minutes to firm up the filling.
Assemble the brownies
Remove the frozen filling from the freezer and gently lift it out of the pan.
In the same parchment-lined pan, pour the first half of the brownie batter. Smooth the surface with a spatula.
Then, place the frozen filling (which has already taken the shape of the pan) onto the brownie batter.
Finally, cover the filling with the second half of the brownie batter and smooth the surface.
Baking
Bake the brownies for 20 to 25 minutes, or until the surface is slightly golden and a toothpick inserted into the center comes out with a few moist crumbs. Be careful not to overbake to keep the inside fudgy.
Let it cool
Remove the brownies from the oven and let them cool in the pan for 10 minutes, then transfer them to a wire rack to cool completely.
