Fluffy Classic Apple Cake

Ingredients:

  • 2 eggs
  • 60g sugar
  • 110g vanilla yogurt
  • 80ml vegetable oil
  • 150g all-purpose flour (adjust as needed for desired cake texture)
  • 16g baking powder
  • 1 pinch of salt
  • 1 tsp vanilla extract
  • 2-3 apples, peeled and thinly sliced
Preparation method:

Preheat your oven to 180°C (350°F). In a large bowl, whisk the eggs with the sugar until the mixture becomes light and fluffy. Next, add the vanilla yogurt, followed by the vegetable oil, mixing well after each addition. Stir in the vanilla extract and a pinch of salt. Sift the flour and baking powder over the mixture, then gently fold them in until you have a smooth, even batter.

Peel the apples, remove the seeds, and slice them thinly. Pour the batter into a greased rectangular baking pan. Arrange the apple slices in rows across the top of the batter for an attractive presentation. Bake for 30 to 40 minutes, or until a toothpick inserted in the center comes out clean.

Once out of the oven, allow the cake to cool slightly. Then, brush the surface with a bit of warm jam for a sweet, glossy finish.
