Moroccan Ground Beef Tagine with Fresh Tomatoes

Ingredients:

  • 250g ground beef
  • 2 large tomatoes
  • 1 large onion, finely chopped
  • Fresh parsley, chopped
  • Salt and pepper
  • Ground cumin
  • Paprika
  • Ground ginger
  • Olive oil
Preparation method:

In a bowl, combine the ground beef with the spices and a handful of chopped parsley. Mix well and shape the mixture into small meatballs, then set them aside.

In a tagine, heat some olive oil over medium heat and add the finely chopped onion. Sauté until soft and translucent. Grate the tomatoes and add them to the tagine, seasoning with a pinch of salt and pepper. Let the tomato mixture cook down for a few minutes until it starts to thicken.

Carefully place the meatballs into the tagine, cover with the lid, and allow them to cook on low heat until the meatballs are fully cooked and the sauce has reduced.

Once done, garnish with fresh parsley and serve.
