Moroccan Fava Bean Soup: Traditional Bissara Recipe

Ingredients:


  • 250 g dried split fava beans
  • 4 cloves garlic, minced
  • 2 tsp ground cumin
  • 1 tsp salt, or to taste
  • 30 ml olive oil
  • 1l water, with additional as needed for desired consistency
Preparation method:

Start by thoroughly rinsing the dried fava beans under cold water to remove any impurities. Then, place them in a pressure cooker along with the minced garlic, cumin, salt, and olive oil. Pour 1 liter of water over the ingredients, then close the pressure cooker. Cook over medium heat for 20 minutes after the whistle starts. Once the time is up, release the pressure before opening the cooker. Next, use an immersion blender to blend the mixture directly in the pot until you achieve a smooth and creamy texture. If the soup is too thick for your liking, you can adjust the consistency by adding a bit of hot water. Serve your Bissara hot, garnished with an extra drizzle of olive oil and sprinkled with cumin and sweet paprika for an added touch of flavor and color.
