Quick & Easy Lemon Cake

Ingredients:

  • 4 eggs
  • 200g sugar
  • 6 tablespoons fresh lemon juice (from 1 large lemon)
  • Zest of 1 lemon
  • 200ml vegetable oil
  • 200ml milk
  • 360g all-purpose flour
  • 20g baking powder
Preparation method:

To prepare the lemon cake, start by preheating your oven to 180°C (350°F). In a large bowl, crack the 4 eggs and add the 200g of sugar. Whisk the mixture until it becomes pale and creamy. Gradually incorporate the 6 tablespoons of fresh lemon juice and the zest of 1 lemon, mixing well. Next, slowly drizzle in the 200ml of vegetable oil while continuing to whisk until everything is well combined. Add the 200ml of milk and stir until you achieve a smooth texture. In another bowl, sift together the 360g of all-purpose flour and the 20g of baking powder, then gradually fold the dry ingredients into the wet mixture, being careful not to overmix. Pour the batter into a greased and floured cake pan. Finally, bake the cake for about 30 minutes, or until it is golden brown and a knife inserted into the center comes out clean.
