Ingredients:


For the cookie dough:

  • 100g softened butter
  • 50g granulated sugar
  • 75g brown sugar
  • 1 egg
  • 140g all-purpose flour
  • 1g baking powder
  • 110g dark chocolate chips

For the flan mixture:

  • 160g egg yolks
  • 150g granulated sugar
  • 1 vanilla bean
  • 45g cornstarch
  • 560ml milk
  • 190ml heavy cream
  • 75g butter
Preparation method:

Preparation of the Cookie Dough:

Start by creaming the softened butter with the granulated sugar and brown sugar in a large bowl until you achieve a creamy and smooth texture. Incorporate the egg, then add the sifted flour and baking powder. Mix thoroughly until the dough is well combined. Gently fold in the dark chocolate chips. Spread the dough evenly into a mold lined with parchment paper, making sure to slightly raise the edges to form a border, like a small cup, to hold the flan mixture. Place the mold in the freezer to firm up while you prepare the flan.

Preparation of the Flan Mixture:

In a saucepan, combine the heavy cream and the split vanilla pod, scraped but not yet heated. In a separate bowl, whisk the egg yolks with the granulated sugar until the mixture is pale and frothy. Add the cornstarch and mix well. Gradually pour in the cold milk while continuously stirring to achieve a smooth and homogeneous consistency.

Once the mixture is well combined, pour it into the saucepan containing the cream and vanilla. Heat over medium heat, stirring constantly until the mixture thickens. Once the flan mixture has thickened, remove it from the heat and allow it to cool to room temperature for about 15 minutes.

Assembly and Finishing:

Remove the mold from the freezer and carefully pour the flan mixture over the cookie dough. Bake in a preheated oven at 170°C (340°F) for approximately 45 minutes. Once baking is complete, allow the flan to cool slightly at room temperature. Then, transfer it to the refrigerator for at least 4 hours to ensure it sets properly before serving. This waiting period will provide a perfect texture, revealing a delightful contrast between the creamy flan and the cookie dough.
