Chicken Fillet in Creamy Mushroom Sauce

Ingredients:


  • 4 chicken fillets
  • 200 g of button mushrooms, sliced
  • 400 ml of heavy cream
  • 2 tablespoon of butter
  • 2 garlic cloves, finely chopped
  • 1 large onion, finely sliced
  • 2 tablespoons of flour
  • 2 tablespoons of olive oil
  • Fine salt, to taste
  • Freshly ground black pepper, to taste

For the chicken fillet marinade:

  • 1 teaspoon of ground ginger
  • 1 teaspoon of paprika
  • 1 teaspoon of garlic powder
  • Fine salt, to taste
  • Freshly ground black pepper, to taste
Preparation method:

Start by marinating the chicken fillets by rubbing them with fine salt, black pepper, ground ginger, paprika, and garlic powder. Allow the fillets to marinate for at least 30 minutes so that the flavors penetrate well.

In a skillet, heat the butter over medium heat. Once the butter is melted, add the chicken fillets and cook until they are golden brown and cooked through, about 6 to 7 minutes on each side, depending on their thickness. Once cooked, remove the chicken fillets from the skillet and set them aside, leaving the juices and drippings in the skillet.

Before adding the onions, check if the skillet needs a little more butter to prevent the onions from sticking. If necessary, add a small amount of butter, then incorporate the finely chopped onion. Sauté until it becomes translucent and slightly caramelized, about 5 to 7 minutes. Next, add the finely chopped garlic cloves and the sliced mushrooms. Cook for 5 to 6 minutes, stirring occasionally, until the mushrooms are tender and have released their moisture.

Once the mushrooms are cooked, sprinkle the mixture with 2 tablespoons of flour, stirring well to combine. Then, gradually pour in the 400 ml of heavy cream while continuing to stir until you have a smooth sauce. Let the sauce simmer for about 5 minutes, until it thickens slightly. Adjust the seasoning with salt and black pepper to taste.

Finally, return the chicken fillets to the skillet with the sauce, then remove the skillet from the heat. Let the fillets rest in the sauce for about 15 minutes to absorb the flavors.
