Turkish Pancakes with Custard Filling

Ingredients:

 For the Pancakes:

  • 2 eggs
  • 4 tbsp sugar
  • 2 tbsp oil
  • 14 g unsweetened cocoa powder
  • 12 g baking powder
  • 7 g vanilla sugar
  • 300 ml milk
  • 250 g flour
For the Custard Cream:
  • 2 eggs
  • 14 g vanilla sugar
  • 3 tbsp sugar
  • 3 tbsp flour
  • 500 ml milk
Decoration:
  • Melted chocolate
  • Chocolate sprinkles
Preparation method:

In a large bowl, whisk the eggs with the sugar and vanilla sugar until the mixture is frothy. Add the oil and mix well. In another bowl, sift the flour, cocoa powder, and baking powder. Gradually incorporate the dry ingredients into the egg mixture while slowly pouring in the milk. Gently mix until you achieve a smooth and lump-free batter. Let the batter rest for 10 to 15 minutes. Heat a mini-pancake pan or a large skillet, using a spoon to pour small amounts of batter to form mini-pancakes. Cook until bubbles appear on the surface, then flip them to brown the other side.

For the custard cream, in a saucepan, whisk the eggs with the sugar and vanilla sugar until the mixture is well combined. Add the flour while continuing to whisk to avoid lumps. Gradually pour in the milk while stirring. Place the saucepan over medium heat and constantly stir with a wooden spatula or whisk until the cream thickens. Once the custard is thickened and smooth, remove it from the heat and let it cool before using it to fill the pancakes.

For assembly, take one pancake and spread a layer of custard cream using a piping bag. Place another pancake on top to make a sandwich. Next, dip half of the pancake sandwich into the melted chocolate. Finally, decorate the chocolate-coated part with chocolate sprinkles. Allow to cool slightly before serving.
