Ingredients:

  • 400 g chicken liver, cleaned and cut into pieces
  • 1 large onion, finely chopped
  • 1 yellow bell pepper, cut into thin strips
  • 3 cloves garlic, grated
  • Coriander and parsley, finely chopped
  • 4 tablespoons olive oil
  • Salt, to taste
  • 1 teaspoon black pepper
  • 1 teaspoon ginger
  • 1 teaspoon turmeric
  • 1 tablespoon cumin
  • 1 tablespoon paprika
  • 1 teaspoon ground coriander
  • Juice of half a lemon

Preparation method:

In a tagine or large pot, heat 4 tablespoons of olive oil over medium heat. Add the finely chopped onion and sauté until it becomes translucent and lightly golden, about 5 to 7 minutes. Next, add the grated garlic and cook for another 1 to 2 minutes. Add the finely chopped coriander and parsley, then the spices: 1 teaspoon of black pepper, 1 teaspoon of ginger, 1 teaspoon of turmeric, 1 tablespoon of cumin, 1 tablespoon of paprika, and 1 teaspoon of ground coriander. Mix well and let the spices blend with the onions for a few minutes to release their aroma. Add the chicken liver and lightly brown it. Pour in the juice of half a lemon, mix everything together, then arrange the yellow bell pepper strips on top without mixing them in. Cover the tagine and let it simmer over low heat for about 30 to 40 minutes, until the chicken liver is cooked and tender. Enjoy your meal!
