Chicken Tikka Masala Twist

Ingredients:

For the Sauce:

  • 2 onions
  • 1 green bell pepper
  • 1 red bell pepper
  • 1/4 of a hot pepper (optional)
  • 2 tomatoes
  • 2 cloves of garlic
  • 1 tsp ginger
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp black pepper
  • Salt to taste
  • 1 tbsp tikka masala spice mix (if available)
  • 2 bay leaves
  • 3 cardamom pods
  • A few cloves
  • Olive oil
  • 220 g (about 1 cup) plain yogurt
  • 200 g (about 1 cup) cooking cream
For the Chicken:
  • 500 g (about 1 lb) chicken breast (cut into large chunks)
  • 2 cloves of garlic
  • Olive oil
  • Salt
  • Black pepper

Preparation method:

In a pot, heat a bit of olive oil and add the sliced onions, cooking them for about a minute. Add the grated garlic, bell peppers, and tomatoes cut into strips, along with all the spices listed in the ingredients. Cook until the vegetables are tender. Then, incorporate the yogurt and let it simmer for a few minutes. Transfer this mixture to a blender, add the cooking cream, and blend until you achieve a creamy, thick sauce. Set it aside. In the same pot (without washing it), heat a bit more olive oil and add the chicken pieces cut into large chunks. Season with salt, pepper, and the grated garlic, and cook the chicken for about 10 minutes. Next, add the blended sauce to the pot and cook for a bit longer to heat everything through. Remove from heat, sprinkle with chopped parsley, and serve with basmati rice. Enjoy this delicious chicken tikka masala with a touch of Easy Cooking with Maha.
