Greek-Spiced Lemon Chicken

Ingredients

Chicken Marinade:

  • 5 chicken thighs
  • 2 tablespoons olive oil
  • Salt, pepper, ginger
  • Greek chicken spice blend (oregano, basil, curry powder)
  • Juice of half a lemon
  • Garlic

For the Preparation:

  • 3-4 potatoes
  • 2 onions
  • Lemon slices
  • Greek spices
  • Olive oil
  • Water
Preparation method:

In a large bowl, place the chicken thighs. Add the marinade spices, olive oil, lemon juice, and garlic. Thoroughly rub the chicken with the marinade to ensure the meat is well coated.

Slice the potatoes into rounds and thinly slice the onions. In an ovenproof dish, arrange a layer of potatoes, followed by the onions. Add a few lemon slices on top and season with the Greek spices.

Place the marinated chicken thighs over the vegetables. Drizzle with olive oil, then add a little water to help with the cooking. Cover the dish first with parchment paper, then with aluminum foil.

Bake at 180°C (350°F) for about 1 hour and 30 minutes, or until the chicken is golden and cooked through, depending on your oven.
