Ingredients:

  • 1 large quarter of pumpkin
  • 2 onions
  • 1 tomato
  • 2 cloves of garlic
  • 5 tablespoons of olive oil
  • 2 bay leaves
  • 1 sprig of rosemary
  • Salt
  • Pepper
  • Ground ginger
  • Ground turmeric
  • Parsley for garnish
Method of Preparation:

Start by peeling and cutting the pumpkin into large chunks, then peel and chop the onions. Dice the tomato into small pieces and crush the garlic cloves. In a large pot, heat the 5 tablespoons of olive oil over medium heat. Add the chopped onions and sauté them until they become translucent, then incorporate the crushed garlic and sauté for another minute. Next, add the pumpkin chunks, diced tomato, bay leaves, a sprig of rosemary, and season with salt, pepper, ground ginger, and ground turmeric. Stir well to coat all the vegetables with the spices and oil. Pour in enough water to almost cover the vegetables, bring to a boil, then reduce the heat and let it simmer for about 20 to 25 minutes, until the pumpkin is tender. Remove the bay leaves and rosemary sprig, then blend the soup using an immersion blender or in a regular blender until smooth and creamy. Adjust the seasoning to your taste before serving the soup hot, garnished with a small sprig of parsley for a final touch.
