Classic French Lemon Madeleines

Ingredients:

  • 2 eggs
  • Zest of 1 lemon
  • 90 g (1/2 cup) sugar
  • Vanilla extract (to taste)
  • 30 ml (2 tablespoons) milk
  • 125 g (1 cup) flour
  • 8 g (2 teaspoons) baking powder
  • 100 g (1/2 cup) melted butter

Preparation method:
Preheat the oven to 250°C (480°F). In a mixing bowl, combine the sugar and lemon zest, rubbing them together with your fingers to release the lemon's aroma. Add the eggs, vanilla extract, and milk, and whisk with a manual whisk until the mixture is smooth. Sift in the flour and baking powder, and gently mix until smooth. Finally, fold in the melted butter until the batter is homogeneous.

Cover the bowl with parchment paper and refrigerate for 3 hours. This step is essential for achieving the signature Madeleine bump. Once the batter is chilled, transfer it to a piping bag. Grease a Madeleine mold and fill each cavity with the batter, making sure not to overfill to prevent overflow. Fill each cavity halfway.

Bake in the preheated oven, then immediately reduce the temperature to 200°C (390°F) and bake for about 12 minutes, or until the Madeleines are golden and have formed a nice bump on top. Each oven is different, so adjust the baking time if necessary to achieve perfect Madeleines.
