Ingredients:


Chicken Marinade:

  • 500g chicken breast, cut into thin strips
  • 100g unsweetened yogurt
  • 1 red bell pepper
  • 5 garlic cloves
  • Juice of half a lemon
  • Juice of half an orange
  • Olive oil
  • Salt
  • 1 tbsp cumin
  • 1 tbsp paprika
  • 1/2 tsp ground cardamom
  • 1 tbsp pepper
  • 1 tbsp ground ginger
  • 1 tsp cinnamon
  • 1 tbsp ground coriander
  • 1 tbsp onion powder
  • 1 tsp ground cloves
  • A pinch of nutmeg

Mayonnaise Sauce:

  • 1 egg
  • 150 ml oil
  • Salt
  • Pepper
  • 1 garlic clove

For the Sandwich:

  • Pickles, sliced into strips
  • Tacos bread or shawarma bread
Preparation method:

To prepare the marinade, start by placing all the ingredients, except the chicken, in a blender and blend until smooth and homogeneous. Next, place the chicken strips in a large bowl, pour the marinade over them, and mix thoroughly to ensure every piece of chicken is well coated. Cover the bowl with parchment paper and let it marinate in the refrigerator for at least 6 hours. Once the chicken is marinated, heat some oil in a pan and cook the chicken until it's nicely browned. Then, drain the chicken in a colander, making sure to save the cooking oil for later.

For the mayonnaise, start by whisking the egg with the garlic, salt, and pepper. While continuing to whisk, slowly add the oil until the mayonnaise thickens and becomes creamy. Once the mayonnaise is ready, take a shawarma bread or taco bread, spread a layer of mayonnaise, add the cooked marinated chicken, and the sliced pickles. Fold the sandwich and, in a pan, fry it on both sides using some of the reserved chicken marinade oil. Cook until the bread is golden and crispy. Your shawarma is ready to be served!
