Ingredients:
For the dough:
- 2 eggs
- 250g butter
- 150g powdered sugar
- 8g of baking powder
- 500g flour
For the almond mixture:
- 500g unpeeled almonds
- 300g powdered sugar
- 2 lemons
Decoration:
- 400g powdered sugar
- 2 lemons
- Turmeric
Preparation method:
For the dough: In a bowl, mix softened butter with powdered sugar until creamy and homogeneous. Then, add eggs one by one, ensuring they are well incorporated into the mixture. Once eggs are well integrated, add sifted flour and baking powder. Knead the dough until smooth and non-sticky. Wrap it in plastic wrap and let it rest.
For the almond mixture: Take unpeeled almonds and lightly blend them until they reach a slightly granular texture. In a bowl, combine these blended almonds with powdered sugar, zest of two lemons, and their freshly squeezed juice. Mix all ingredients until you obtain a homogeneous and fragrant paste, infused with the vibrant and fresh flavors of almonds and citrus.
After preparing the dough according to the previous steps, divide it into two equal parts. Roll out the first half of the dough into a rectangle shape on a baking sheet lined with parchment paper. Next, evenly spread the almond and lemon mixture prepared earlier over this first layer of dough. Take the second half of the dough and roll it out into a rectangle shape as well, then gently place it on top of the almond and lemon mixture, forming a sort of sandwich. Make sure to seal the edges well to prevent the filling from escaping during baking. Preheat your oven to 180 degrees Celsius. Then, bake your preparation for about 20 to 25 minutes, until the top is golden brown.
Once out of the oven, immediately prepare the decoration mixture by combining powdered sugar and juice of two lemons with a touch of turmeric to achieve a vibrant yellow color. Pour this slightly liquid glaze over the still warm biscuit, ensuring it is evenly distributed over the entire surface. Allow the cake to cool completely at room temperature, allowing the glaze to slightly solidify. Once cooled, cut your cake into small equal squares using a sharp knife. You can then enjoy these delicious lemon almond bars, ready to be savored with pleasure.
