Chocolate Cake Layers:
- 3 eggs
- 125 ml heavy cream
- 40g cocoa powder
- 125g flour
- 125g sugar
- 4g of baking powder
Filling:
- 400g mascarpone
- 200g whipped cream
- 4 tablespoons sugar
- 4 teaspoons honey
Preparation Method:
For the chocolate layers:
In a bowl, crack the 3 eggs and beat them vigorously with a whisk. Add the heavy cream and whisk again. Then, add the flour, baking powder, sugar, and finally, the cocoa powder. Mix well with the whisk until the batter is smooth and homogeneous.
Prepare a baking sheet lined with parchment paper and pour the batter onto it, spreading it evenly. Bake in a preheated oven at 180°C (350°F) for 20 to 25 minutes, checking the baking progress occasionally.
For the filling:
In a bowl, combine the mascarpone, sugar, and honey. Beat with an electric mixer for 3 to 4 minutes. Then, fold in the whipped cream and mix until the filling is well combined.
Once the chocolate cake has baked and cooled, cut it in half. Place one layer of the chocolate cake on a wooden board, with the baked side facing up. Spread the filling evenly over the cake. Place the second layer of the chocolate cake on top, with the baked side facing down. Gently press the layers together and use a spatula to smooth the sides.
